Japan produces some of the best green teas in the world. The primary producing area in Japan is the Shizuoka prefecture, which is west south west of Tokyo. The famous bullet train zooms through the tea growing area about 25 minutes after leaving Shinjuku station on its way to Osaka. The efficiency of Japan's tea production is amongst the highest in the world reaching yields of 1500 pounds per acre. Despite the fact that mechanical plucking is used, the tea made is generally considered the best green tea in the world. Interestingly, due to its northern latitude all the tea fields have large fans covering the whole acreage. The fans are turned on during cold snaps to circulate the air and protect the tea bush from freezing. Japan only exports about 1-2 percent of its total production and recently has become a leading importer of the finest teas in the world. Over half of the yearly production of Japanese tea comes from Shizuoka. The production of green tea entails the steaming of the green leaf and hand or machine rubbing. The teas are then pan-fried or basket fired which gives them a distinctive appearance and glossy look and feel. These methods give a taste that is light in color but rich and full in the cup. Sencha is commonly used in Japanese tea ceremonies marking events of personal importance. In this type of ceremony it is the ritual that is of paramount importance as the individual is being acknowledged. -
Jasmine tea is one of the most pleasant tasting green teas available on the market. On the nose the dry tea has a floral bouquet, which literally causes your senses to come alive with pleasant thoughts. The flavour is enhanced with the addition of jasmine blossoms which give the tea a visual appeal few other teas are capable of copying.
There are many different grades of jasmine tea. This particular grade is the first grade below the exotic jasmines. It has all the flavour, aroma and good green tea qualities but not the exorbitant price. In China they declare this jasmine tea as 'Jasmine #1'.
The production of jasmine tea is quite interesting. It is important to begin with high quality green tea - tea that has been produced between the middle of March and the middle of May. Equally important for jasmine tea are fine jasmine blossoms - flowers that bloom between the 1st of May and the end of May (these have the most intense aroma). Traditionally layers of jasmine blossoms were placed between fine green tea. In time the scent of the jasmine permeated the tea. Today, hot air is passed through the jasmine blossoms and then filtered through the tea so that the blossoms can be used more than once. The exhausted blossoms are then used to decorate the tea. Produced in both China and Taiwan, jasmine tea yields a cup with all the concentrated heady bouquet of a garden in bloom. -

About this tea: As with our normal teas, we insist that our herbal ones always use the whole leaf or flower. The leaf should be worshipped, not crushed. You'll find the mint will be fresher and finer than any teabag mint you have tasted before. Mint is well known to be a great tummy tonic, so sip this when your stomach is grumbling. Taste: Pure mint - so, as you'd expect a strong minty taste, then. Very refreshing, very light. Try it: Pure. Or try a mini blend of 1 Peppermint Leaves tea temple and 1 Chocolate Flake voilà! Mint choc chip! Good if you're feeling: Unpleasant to be around. This helps to eradicate toxic breath and a dodgy stomach. -

About this tea: Lemongrass is drunk all over Asia as an aid to digestion, helping to kill off any nasties in your tummy. Originally from Malaysia, it flourishes in any humid clime. Well-known to us as an ingredient in Thai cooking, little did we know what a wonderful drink this makes too. Taste: An unexpectedly sweet lime and citrus drink. Try it: As it is, but why not add some of the cooled infusion to elderflower cordial for a sophisticated squash? Good if you're feeling: As toxic as a barrel of plutonium. This sweet herbal tea will refresh the system. -
Hunan Province produces some excellent Japanese style green teas. Early in the new season the tea is a bright emerald green and has the best flavour noted by a spring fresh character with pungency and body. [In Hunan the tea starts growing about March 15th, and between then and the end of April the quality is very good. Once you pass April, the quality plummets on account of the volume of leaf taken in and the bushes growing too quickly. The policy is that rhe China tea requirements are only bought from tea grown between March 15 and April 15 - you will taste our quality and dedication to better tea]. Sencha is commonly used in Japanese tea ceremonies marking events of personal importance. In this type of ceremony it is the ritual that is of paramount importance as the individual is being acknowledged. Flavoured tea is a relatively new phenomena and combining flavours with roses and Japanese style green tea is almost considered 'avant garde' by our Japanese friends.
Kyoto is the cultural centre of Japan. Several centuries ago Kyoto was the religious capital of Japan. The relics of this past are evident throughout the city. Beside the multitude of temples that dot the city, and the wonderful parks where religious scholars once walked, the city has more the 1000 Torjii - those typical gate/arch structures that one associates with Japan. The Torjii are large with the top shaped like a curved samurai sword (respect) and the two pillars are solid and stately (well being). During the springtime this area of Japan is ablaze with the new season cherry blossoms and the air is filled with sweet aroma. (The rose petals in this blend are intended to simulate these delicate cherry blossoms and the flavour is reminiscent of the beautiful smells that waft on the springtime breezes.) It is little wonder that this ancient city has a very high ratio of tearooms and this tea was created to honour (very important in Japan) this wonderful time of the year. -

There is something to be said for good old-fashioned romance. Flowers, candlelight, dancing, (if you're feeling frisky, lingerie) - it's a timeless equation. Well, we've got something new to add to your romantic arsenal, Oolong Orange Blossom tea - certain to have a pleasing affect on the object of your affection.
It all starts in 17th Century Italy with the discovery of a particularly fragrant type of Orange Blossom. After a botanist made the discovery, he decided to name the flower Neroli Bigarade after Princess Nerola, the daughter of the ruler of the town where it was found. The princess was delighted and took to wearing a perfume created from the delicate white petals of the blossom. Some legends claim that the Princess and the botanist fell in love and were married, but as town records were poor this remains unsubstantiated. Sounds romantic though! Over the ensuing centuries, the blossoms came to symbolize the Western ideal of love and marriage and their popularity grew, particularly in wedding bouquets. In Victorian England, Orange blossom bouquets were so popular the flowers were imported from Florida strictly for that purpose. It was said at the time that the scent of Orange Blossoms could cause anyone to fall in love.
Well, we aren't matchmakers but if there's one thing we're sure you'll fall in love with it's this tea. The blend was created using a semi-fermented oolong from Taiwan known for a lively full flavour with hints of berry jam and sweet floral undertones. Since food quality orange blossoms are a little harder to come by today than during the Victorian era, after extensive profiling we recreated their flavour using a mix of jasmine and dried orange pieces which we added to the tea. Rounding out the blend is a Ceylon black tea for some added depth. Like love, the cup is sublime. Brew a pot for someone special today! -
